Hunan Fried Rice with Signature Pepper Radish

1/4 cup of Phoenix Green Pepper Radish
2 cups of cooked rice
2 Tbs. olive oil
1 small white onion, diced
1 cup of fresh diced vegetables, peas and carrots are used here, kale is a good choice
2 eggs, mix egg yolk and white
Salt, soy sauce and pepper to taste

Make scrambled egg first. Put it in another bowl for later use. In a large skillet, cook the diced onion and vegetable in olive oil over medium heat until is medium done.Mix scrambled egg and cooked rice in, keep stirring and heat through. Sprinkle salt, soy sauce and pepper to taste. Top the warm dish with our signature Pepper Radish. Makes 4 servings.
