Classic Tomato & Egg Stir Fry Hunan Noodle
4 servings of Phoenix Green Hunan Noodle - Wheat (or Whole Wheat)
4 medium vine ripe tomatoes (about 1pound), diced
4 eggs, mix egg whites and yolk with 1/4 cup of water
2 Tbsp olive oil
1 Tsp salt
1 1/2 Tsp sugar
Cook noodle according to Cooking Directions and Perfect Noodle Guide below. Heat a large saute pan over medium high heat with olive oil. Pour in egg mix and scramble until it is set, toss in diced tomatoes, sprinkle salt and sugar, stir for about 3 - 4 minutes. Add noodle in until warm.

- Bring water to a rapid boil. To add flavor and reduce stickiness, add salt.
- Add noodle and stir; return to rapid boil.
- Cook uncovered, stirring occasionally.
- Drain well. Add to your favorite stir fry dish or soup.

Maintaining Perfect Noodle
To keep cooked noodle fresh for later use, toss with a small amount of olive oil or sauce, and refrigerate.
